When I went to the Cheese Boutique on 45 Ripley Ave (recently featured in Toronto Life magazine), I told one of the people behind the counter that I wanted to try a new cheese. I told them that my favourite cheese was Chevre Noir. After thinking hard for a minute, she offered me a taste of <b>Vieux Bruges</a>, a cow’s milk cheese from a Belgian town called Bruges. The cheese is apparently aged for 32 months.
YUM. This is definitely one of my favourite cheese now.
